I also used vinyl for durability, but am concerned with it acting like a vapor barrier, trapping moisture/condensation every time there is a temperature variation.

I went to I think like Joan's fabric and got flese blanket material about 9'by 5' I think I can't remember off the top of my head. It cost about $20.get a can of 3m supper 77,i think it was about $10-$15.make sure you get at very least 80% coverage of both the Fiberglas sheet and your new fabric it might take 2cans. It will last for ever. I did mine mossy oak camo I also uplosterd the arm rest and sun visers with the same stuff.

Another take
Sooo, what if you don't even have the board/backing but just have the metal there? I was thinking of using the stuff they put on the underside of tin roofs that is a heat barrier and almost the same material as the sound deadening materials, then putting material onto that for a headliner.
Or I could just bedliner the whole ceiling.

bare
Problem is I don't even have the panel, just the metal. With the summer coming I would rather have something than just bare metal. I do like the way yours looks tho.

A friend of mine has a really trick headliner made of 1/8" ABS sheeting in his Commando that he's been tinkering with. He says he only has about $60 in it and it looks good.

Go to the self-service junk yard and get one. You have no shortage of junk yards in your neck of the woods. I know there's a Pick-n-Pull and an LKQ in Dallas, maybe more than one. You can search Pick-n-Pull's vehicle inventory on Row52.com to see what's there before you waste a trip. Row52 usually posts pictures so you can see the exact vehicle.

x2 on the pick n pull. Covering the panel would be easier and probably turn out nicer.
Recovering mine in a black and grey plaid is on my list of stuff I'll get to one day lol. Maybe...

Bed liner would get hot in summer and cold in winter. Maybe for a trail rig but a daily I'd go fabric if you don't have the board take one from a donor at a junkyard for a few bucks.
