89 XJ (Battery Power/Power Steering/Gauge Issues) Assistance Appreciated!

I left both battery cables connected overnight and expected to see a draw. The read looked good though:
I turned the key into the "on" position and the gauge showed the same level as yesterday. I started it up and it was the same (low) read as well.
I tested the alternator with the vehicle running and it was low despite replacing it last week. I'd say it was way low if there wasn't the faintest glow of green on the 12.5 read:
I have a dead/near dead battery I'm going to throw in to see if the alternator charges and will post later. All is good though, I've had this rack slow cooking for a couple hours + now:
I'll definitely post some picks of how they turn out too.

Ohhhh Nujeepguy I know. I'm really keeping it low and slow on these. Usually, I’m already hungry so keep the heat higher and they’re done in about 3 hours and still amazing. It’s been pretty close to that already and the bark hasn’t even developed fully. Raising the heat a little and will post final results!
I swapped out the battery with one I couldn’t get to start it prior to changing the alternator… It read far higher than anticipated and she fired up on first turn.
Alternator test after it was running:
Checked the gauge after that… based on this, it shouldn’t have even turned over?
I let it run for a good 10 minutes and gave her some a couple times. Tested the alternator before shutting off… now it’s reading one big red:
Tested the battery again and this suggests it charged:
The dash gauge never moved though?
With these POS diagnostics tools, I’m not sure what to think.
