Happens quick and you'll get unexplained coolant loss. Take cap off valve cover look between 3 and 4 rocker arms for "the crack". Get it swapped ASAP before more damage ensues. Pm if you have any questions. I just swapped a Clearwater head in my 01. Mine wasn't cracked but did it for peace of mind.

Well, I hate to tell you this but on a '00 a milky oil almost always translates to a cracked head not a blown head gasket. Read up on the 0331 head and you'll get the picture. How long have you been driving with that milky oil in there? If long, then that's a whole another can of worms.
