I own a 1989 2.1 TD XJ, whose previous owners have had the entire "outside" section of the AC system (Compressor, condenser, dryer) with the exception of the expansion valve (and thus presumably the evaporator should still be in place, as the air blower and heater still work just dandy) have been removed.
Normally i wouldn't mind but here in Italy the summer has become just about unbearable and as such i really would like to purchase new components and reinstall the system, but i have been unable to find any detailed pictures or schematics of the AC system for this model for me to figure out what exact parts i need and how to reinstall them.

I'd appreciate if any owners of the 2.1 XJ with a functioning AC (or anyone who just knows more about it than i do) could provide me some pictures of the components in question or a diagram.

I do not think a 2.1 Diesel was sold in US, but here is a few suggestions

I think Italy is LHD ?

If so, I would try and find the Parts Manual for your year..ALL parts pic shown in there, can be downloaded free if you look hard enough

Also, I see no reason why the A/C parts would be different on a Diesel Vs Petrol, so any LHD '89 should have the same A/C parts

Finally, it is possible to fit compressor/drier/condensor etc, as "Universal" Parts.

I have done this with another vehicle and Sanden Compressor

There was a diesel XJ offered very early in the US. It had a 2.1l Renault motor. 85-86 Only I believe. I don't think diagrams for that would help his Euro release.
