How would I go about turning up the idle? That might be because if I'm stopped I can hold the brake and lightly press the gas and the pressure goes back up. I also noticed that when I hit the brakes to slow down the pressure starts to fall fast.

Yep. No oil pressure in an engine that's not running.

So the issue is low idle/stalling? Oil pressure loss is an effect just like the power steering not working, eh?

Go ahead and get the sender it may be bad. But I wouldn't think it would fix your low idle. Try this too. Pick up a bottle of carb/throttle bottle cleaner while your at the parts store.

As much as I love to see another oil sending unit be replaced, this isn't your problem. Oil pressure is created by the engine spinning. No engine movement = no oil pressure

If you have to keep your foot on the gas at stop lights to keep it from stalling, you need to clean your throttle body, paying special attention to the IAC.
