Default Low Operating Temp

96 Classic. 121000 miles. Now that it is cold in VA my Jeep gets to maybe 180*. My gas mileage went down alot.
Changed T-stat and hoses. I did some research and my guess is that my fan comes on too early and stays on.
What else could it be? Any how to guides on changing the fan clutch?

Fan clutch is a simple bolt on, nothing to it.

The fan clutch is a simple bolt on, but not simple to get to unless you pull the rad. It's a PITA if you leave the rad in and loosen the fan shroud and try to get your hands down in there to bolt it down
