Need advice for tempature

Hello I'm currently working on a temperature issue with my jeep. I noticed yesterday that when I was driving it barley made it to the first notch. Today I drove it and it heated up, when I was idling it was at what it normally is in between the second and third tick but when I started to drive on the highway it got went up to 210 and then it would go past it sometimes but it stayed about in that range while in the highway. Normally my temp stays in between the second and third tick when I'm driving on the highway. I had an incident the other day where I bumped my radiator cap and didn't notice and when I was driving it came off I caught it real quick and put it back on but do you think air got caught in the system the radiator cap is going bad I bought the cap a year ago. Or what I think is most likely is the temp sending unit at the head. I accidentally broke it in half while changing wires a few months ago but it was a real clean break and was able to glue it back together and have no problems but now I think it's possibly failing cause it's loose and the temperature gauge is jumping sometimes when it didn't before,haven't done any work recently having to do with the heating system and it's been having good temps before this. What are some precautions I should take when changing it so I don't snap the bolt. Should I spray it down with penetrant before hand. What brand sensor should I get the 3 I found on Amazon are these
