Wish I could help out on this one bud, but not too good with electrical. Bit if you do happen to find out what the issue is let us know.

Coolant temperature sensor is cheap and easy to replace. Unplug/unscrew old one, screw/plug in new one (I think you need teflon tape on the new one). They are around $13. Probably worth trying that before you spend time overthinking it.

i had this when i first got my jeep... i completly flushed the rad and the block because you have to take the t-stat housing off when u chane the t-stat anyway... replaced the temp sensor and thermostat and put prestone 50/50 in and the light went off. get a t-stat that opens at 160 it helps you run cooler

Either teflon tape or loctite. I've replaced one so far, usually fixes the problem.
Unplug your battery, replace the temp sensor, plug the battery back up. Should fix it no problem.

You don't really want to run cooler, you just don't want to overheat. Operating temperature is OK. Any functioning thermostat will be fully open before it boils. If somebody tells you water moving too fast won't pick up heat from the engine or register heat on the gauge, just smile, agree, and slowly back away.
