After it was installed I let it idle for 10 minutes and the temp stayed steady at under the 210* marker I went out for a hard 15 minute drive and the temp was around 220*

The sender is just for the gauge and is on the back of the block. I am having a very similar issue where it reads just before the red when it is actually at 210. That issue was both before and after the rad replacement and whole system flush. Did the part you were having issues with come from autozone by chance?

Best way I found to flush the system is with aluminum brightner drain all anti freeze add all water let it run to operating temp 210 and put a cup of aluminum brightner in the radiator and drive it for a half hour then drain all the water after it cools then flush it with a water hose for 20 minutes or till you think its all out and clear water is showing, them fill back up with antifreeze and water, I've done this to about every vehicle I've owned, just my 2cents

Sorry I didn't notice what year yours was, my 91 has two temp sensors, one on the tstat housing, this is for the ecu, the other one is on the back of the head drivers side, for gauge or idiot light. Coach.
