Is there a way to disconnect stock sway bar?

Yes just unbolt the lower nuts and then tie it up out of the way. it takes about 5 minutes to do. The bolt itself is pressed in so don't try to turn or wrench it out. You can always remove that bolt and replace it with a regular bolt so it's easier to disconnect. You will need a c-press/clamp to get the bolts out.

Some people use those velcro straps. They bolt or screw one end into the fender somewhere above the tire alongside the frame and then pull the sway bar up and wrap the velcro strap around it. Other's use stuff like straps, rubber tie downs, etc. Be creative

Ok. I know how to disconnect them now but I just don't understand where I can fasten them. I didn't do it because I was acared it was gunna hang down and get f-ed up or something.
If I just unbolt them, I can re-bolt them for the road, right?

you can do that, but its a PITA. if you let it hang down, it will get messed up on the trail. you can use bungees, or buy or make something like these:
