Where to check the REAL engine Temp ?

Where to check the REAL engine Temp ?
I wand to check real engine / coolant temp (hopefully 210° when idling or driving, right ? )
I know my gauge might not be accurate on my 87' XJ.
It usually shows around 176°. and sometimes 195°
I need to know...
So. I'll use my IR thermometer.
But where to point at ?
- radiator
- thermostat housing
- somewhere else ?

Thermostat housing would be a good spot. Its the last spot in the engine for the coolant before it goes to the radiator.

The t-stat housing is the best as previously described BUT if your temp sender for the gauge is in a different spot ( not sure where it is on an 87) the gauge, even if accurate will not read same as thermostat

on a 87, the temp sender is located close to the oil filter.
On the engine block.
I guess the thermostat housing is better.
