Default Will 31X10.5 fit my stock Pioneer?
Will that size tire for one, fit on the rim and two, fit on the truck.

If there is some rubbing I could just cut out what it's rubbing on.
Unless it would rub on steering parts.

The tire shop said the biggest I could run would be 30X9.50.
But I want to run 31X10.50X15.

You will need to trim fenders and bumpstop properly. Will rub suspension at full lock with stock rims.

Yes they will work. But like salad said you will need to trim the fenders.
