Yea 190. I thought OEM was 195 but 5* isn't the end. As for plugs. Some people say they have no issue with iradiums, platnums, blah blah blah. I've only used OEM style in my jeep so I can't say exactly how they react but I know most people will say to stick with em

Ifk if it matters either but when it was cold my heat sucked like barely warm enough to cut the chill and I was told the core or something had been replaced right before I got it...paid 4k for it I feel kinda jipped but oh well at least if I replace everything I know when and how it was done
Hell, my heat would kill me in the winter. Had to cycle it on an off it was too hot

On the spark plugs, Champions were the factory spec. Chrysler replaced them with NGK within a few years due to premature wear from the reverse/waste spark. So use those if you want OEM spec.

For the first part of this. After a normal drive in your jeep, turn her off. Pop the hood and spin the Fan by hand it should have resistance to it. That means its good. It shouldn't spin more than a quarter IIRC, when hot. The aux fan you should here kick on at 218* and turn off at 205-210.
As for the coolant, when was the last time you had to fill the res. have you done an oil change to check the oil. And check for leaks around the radiator

May need to flush heater core or there's air in there. That I can't answer on but what I can say, web you get the jeep to normal OP temp. Feel the hoses that run on top of the crank case. Feel I they are both hot or not.

Question...do I really need a deep socket 10mm to do the injector swap? I have a normal 10 but id rather not buy this deep socket set unless I need too

Well this is the first time ive ever done injectors n I gotta do it in the parkin lot at work before I deliver my route... should be interesting but ill be happy I did it myself

It was my first time too lol. Don't do it on a hot engine! Once that fuel catches fire, your wires and hoses are done for.

Changing spark plugs in the morning. My dad insists I don't need to use anti seize or dielectric grease. Is he right? Also, I'm just supposed to tighten 1/16th of a turn past hand tight, correct?
