I have absolutely no experience with this, but I'm going to take a guess and say your O2 sensor is starting to go bad, maybe? Back when we had the TJ, an oxygen sensor went bad and caused rough idle and no acceleration at random. I could, of course, be completely wrong. So don't take my word for it.
Cleaning the throttle body could be it. I know when under the butterfly flap (as I call it) it can get gross. So some carburetor cleaner can be used. Just pull the line to flip the flap so you can see in there to determine if it's dirty. This worked for me.

Exact values you should be testing for will depend on year. Chrysler models should use info that's regularly posted by tjwalker

Sounds like the very common problem of the discharge of fuel pressure at the fuel rail. Next time it does it turn the key off and then back on, activating the fuel pump, let the fuel pressure recharge and try starting again.
