could it just need a tune up

I automatically assume this on anything I buy that isn't brand new, and yes it's an excellent place to start.

Wet wires or wires with broken insulation will do it too. Foul right against the side of the block.

Default mis fire number 1 cyl, '95 grand cherokee 4L

There is an intermintent mis-fire of # 1 cyl. No spark at distributor tower. One time it's OK, an hour latter the misfire is back. Changed CS sansor, Cam sensor, cap and rotor. The security mod. had been removed just days before.

Default inconsistent fuel pressure

98 Jeep Cherokee 2.5l, 2wd, stick shift. Recently bought the Jeep, and I've never had alot of acceleration. I know its the 4 cylinder and not the 6, but I can't even beat a prius if I try to race them. I decided to check the fuel pressure, and it's inconsistent when idling, but levels out at 45 or so when the throttle is hit. here's a video:

I've changed the plugs, wires, rotor, cap, oil, air filter, and seafoamed everything since I've bought it. Any ideas for me to try?

EDIT: also worth noting, I left the fuel pressure tester hooked up after I turned the car off, and it stayed at 45 psi. Just to be thorough, I left it hooked up to see if I had a leak in the system. After 25 minutes, the pressure dropped down to 32. I wasn't too thrilled with the tester, as it leaked when I put it at a certain angle, but I wasn't moving it at all when it was sitting there.

While probably not the problem, I suggest also replacing your fuel filter. They're cheap, and it's probably original

Not saying they're extremely FAST but I think if your 4-popper xj can beat a prius, you're doing much better than average - remember, they use the electric motor (torque on demand across RPMs) to accelerate, not the gas motor http://www.0-60specs.com/toyota-prius-0-60-times/

This is definitely where I'd start, followed by taking the injectors out, using a 9v to supply power to them to open the injector up and clean them out, and take off your throttle body and give it a good cleaning by hand. Out of curiosity, what spark plugs did you put in and what did you gap them to?
