How hard is it to do ball-joints, u-joints, hubs and bearings on these? Is it something I could buy the parts for and some beer and have one of you experts help me? Or is it much more involved?

well it'd be cheaper than the shop doing it. but that's obvious. I'm down for helping. I'm not knowledgeable, but I'll do some labor for food and drink, lol.
