sweet, if ya have to freeze anything, place fillets in freezer zip lock, fill with water, burp out all air, freeze, thataway, you can keep an eye on yer fillets,if they start to brown, pull-em and eat em!

one thing i've learned in many years of cooking - wrap meats (chicken especially) in aluminum foil, then place them in a sealed freezer bag. Completely eliminates freezer burn (well...within reason).

i gotta argue the aluminum foil, fish i freeze in water, that way you can monitor it, and there are no absorption issues or any freezer burn,meats on the other hand, i clean, dry and wrap tightly in freezer wrap, then a freezer baggie i will however pre-marinate foods, then freeze them
