How much water do you leave in the bag? Is it basically a frozen block of ice with the fillets inside? Do you just dethaw under running water?

Not enough....

It's a Food Saver....one of the ones with the hose attachment....I'd have to yank it out to get the model.

yes, yes and yes,completely immerse your fish, if you do the running water de thaw deal,keep your fish in the bag, dont let the water run directly on it.
