like the others said, disabling the ABS is as easy as pulling a fuse (and having ABS from the factory may result in lower insurance rates - whether you disable it or not).
Airbags should be a non-issue offroad, and for the same reason as above, you should not intentionally avoid them, especially considering the safety aspects of having airbags in a street driven vehicle.
Year shouldn't matter much to the insurance company other than older = cheaper. All years are essentially the same - options (airbags, abs, etc) are where discounts will apply (or not)). Call them and talk to them about it.
