If you have an acquaintance that is a cracker jack ( meaning talented ) welder you could do the old "plug weld a big *** nut on the bolt head and wrench it out with a big box wrench" trick . When possible I do that.
When it's not possible, a fall back tricks is to drill the bolt head off and try to get it loose with a pair of Knipex Alligators. If that fails me then I fall back to grinding the bolt stub down flush, center punching it dead center to keep the drill bits from walking and drill a small pilot hole and then going up in steps to almost minor diameter
If I'm lucky and I drilled straight enough, the remnants can be chipped out with a fine corner chisel or chased out with a tap.
If you end up doing this use plenty of oil on the tap and for every 1/4 turn you go forward back up 1/8 turn before going forward again. This keeps the chips small and keeps the tap from seizing in the hole.Take it out and clean away the chips every turn or two.

Okay, I tried using the parts catalog, and if I am correct 5602 6779 is the part number for the oil pressure sender I'll need for the full gauge cluster. Amazon doesn't appear to have any mopar replacements, how about crown? Or should I just stick to my nature and go with rockauto?

I cross the number you gave, taking out the space, at Napa and it goes here and says for a gauge.
https://www.napaonline.com/en/p/ECHOP6695\
Here it show the same number with the letters AB at the end.

Lists your Jeep and says gauge so yeah.

The parts catalog, at least the one I have, is a little confusing. But I think you are right.

If I ever get around to the sound deadening of my floor I might have to see about doing that.
Looks great.
Never have seen my whole floor but where I have peeled up the carpet here and there to do stuff it does look good.
Might not be necessary.

It was probably a little overkill for my floors but it's not terribly expensive and the reviews are good. I still have about 1/4 quart left and I brushed some on a few rust spots under the drivers floor.
