What does height have to do with stiffness?
Done properly with the right shocks it will ride good.
But with any lift it will be stiffer than stock, that's normal and something you'll have to deal with.

Generally the taller you go, the stiffer you want it to be to help with stability, weight transfer, drake dive, and the like, but there are lots of ways to build it and height doesn't directly mean its going to be stiff.
Well I suppose cadillacs have been around for over 100 years with the 100 year old suspension technology to match, so you might not be wrong there.
Modern caddy? I guess you havent been in one lately, or you are hiding some kind of special suspension secret behind that longarm kit and generic shocks.

Mine's 6.5 inches and it rides great.
8 inches isn't too high. Do what makes you happy.
