Man, I feel your pain on not feeling like you can rely on your jeep. When I got mine I wouldnt take it more than a few miles. Now I take it anywhere I want to go (and can afford to feed her), I would not let my fiance drive it until just recently because I didnt trust it not to do something weird, shes driving it today on a 200 mile round trip. It just takes time, and a boat load of patience

Sounds to me the two problems are not insurmountable enough to give up especially considering all the work you've already done on it.
I know easy for me to say.
I'd take the 'defective' starter back and exchange it or get a refund.
Is that starter motor a re-man?
I'd also change the oil sending unit as a feel good if nothing else, they're relatively cheap.
Maybe the oil psi and the starter problems are related, bad grounds?
