So far I see:

Cold weather oil change
Antifreeze
Grease door locks and seals
Carry sand or kitty litter
Grease fittings

Is there anything that can be done to prep the underside of the jeep? Any kind of coating or prep to deal with salt, brine, sand etc.. I have nearly zero rust and I'd like to keep it that way.

Also, I'm having the remote start installed next week. Makes life in super cold weather so much easier.
Definately hose the underbody off at every opportunity. One of my clients has a truck depot and I will make a special trip out there expressly to hijack their heated pressure washers.

You could also consider a product like Salt Away, and one of those cheap chemical pressure sprayers. There is a huge paper that some DOT did on abti-corrosion products, and salt away was one of the most effective products IIRC

I usually wax my truck in November, and winterize the vehicle. Clean rear drum brakes so they don't stick, change to cold weather washer fluid, standard oil change and chassis grease, lubricate door locks and latches, make sure emergency and recovery gear is in order.

Also consider adjusting the t-case shift linkage because not being able to use 4-hi can be a real pain when you are battling a blizzard to get home.

Mostly it is just general maintenance, and foxing anything that is broken before winter hits, so I don't have to replace a CPS on the side of the highway in the dead of winter

Edit:
Also, clean all engine electrical connectors, specifically battery terminals, main engine grounds, starter connections, and important connectors (CPS, TPS, Water temp sending unit, etc).

Most of the stuff on my list I keep up to date on, but I always clean my battery terminals even if they look like they are in OK shape.

I run marvels mystery oil in the gas, which feels like it helps with cold starts but I have nothing to back that notion up.
