You'll never find one in working order. There was an XJ that came in the JY in mint condition with 74,000 but was in a front end collision. Everything was is awesome condition on the interior, but the center console latch was broken. I've been in dozens of XJs and have yet to find one unbroken.
. I should break it to be just like everyone else though.

my 87 has the original latch also and it still works. the lid is kind of getting wallored out holes where the screws go in so the lid slides back and forth more then i like but the latch is still good.

any after market part is always a good find, because if you can't use it, you can resell it for a few bucks more: there is always somebody looking for one odd-ball part to match up other after market parts if they break or happen to loose one.
any beefy axle with a nice low gear for larger tires
wiper arms, especially ones that still have relatively strong springs in them
lights, switches, and relays
any type of seat that would be an upgrade to your current one
fabed-up storage parts, like roofs racks or tool boxes for the trunk
etc etc etc
whatever you deem to be an awesome find really: that's the whole fun of pillaging!

Back to the task at hand. Look for factory tow points, aftermarket bumpers and other offroad accessories, lifts, springy mirrors, fan shroud, and a driver's seat without the lean. That should cover the average JY visit.
