Ummm. The 8.25 was hard in the respect of pinion preload of being careful to not over torque the crush sleeve and be ruined. The 30 involves lots of shimming, and because it's all between the carrier and the bearing and the pinion and the bearing, that means a lot of out together and tear down time. I'd probably say the 30.

I have set up bearing for both if you want to borrow them. You need set up carrier and pinion bearings for the 30, and only pinion set ups for the 8.25 since the carrier uses the adjuster rings. You just have to mess with the shims a lot and keep running patterns. Nothing of mine changed between set up and press on real bearings, it really shouldn't other than the .003 shim you add to each side of the 30's carrier so it is tight to get in the housing. Preload for the pinion a would be the only big changer.
