I see where things can happen, I have been skeptical too, But have a friend with a ranger that has 2.5" wheel spacer on the front with like 200k miles on them with no issues...

if you already have them, use them. they will work. that's what they're made for.
just don't run them with larger backspaced wheels (3.75). that would only cause concern. but with stock rims, no problem for a while. and don't jump anything with them on, that's for sure.

So If I got new rims with more back spacing would I have to get new tires as well?

A buddy of mine installed wheel spacers on his wrongler. This is what happened 12 hours after the install. Just get rims with more backspacing and call it a day.

Yeah, the shop said they didn't do a quality inspection or some crazy nonsense. Thats why you do stuff yourself so only you are to blame haha.

Whatever kind you like. Steel is the cheapest, it will run you about the same as wheel spacers.

crager has the soft 8s or d-window rims that are pretty cheap and are a great buy i have had no issues

When it comes to rims it's pretty much aluminum or steel, after that it's personal opinion (excluding beadlocks).

I like beadlocks, but is there a practical difference between aluminum or steel?

Aluminum is lighter but easier to bend. Steel is heavier, tougher to bend, and can be fixed on the trail if damage is minor.
