Lets say I go with a set of 16 or 17s, what tire should I be looking at. I want the look of a beefy mud tire with a decent ride on the streets. Obviously thats a tough combo to come up with but what are my options to get close to that?

I ride with 35's on 18's these Dick Cepek FC2 are considered AT but have a very large row of lugs on the outside and really dig in but ride great on the road. The gap is just as large as my wife's 31" MT's

Yeah it looks huge! Lol... Well I ordered a 3" lift that will be here tomorrow. I dont think I can get 35s in there but maybe 33s...
Im actually starting to think about using the rims I have on now and just throwing some nice tires on them?

Why do you say that? Or are you just saying there's no way to get 35s on a 3" lift?
